This 1-2 credit hour class meets Mondays through Thursday. In this field class we will find and identify wild herbs that sustained and enriched the lives of Native Americans and early settlers and learn the culture and uses of herbs from the old world. Our class will prepare a banquet of edible herbs collected from field excursions and study those used as beverages, garnishments, scents, flavorings, and for medical benefits.
